Easy Delicious Lemon Cake

Before I came to the United States I had never heard of a “Box cake” It was 23 years ago so there may be such items in the UK and Ireland now. In this age of Corona-virus flour is almost impossible to find. I wanted to make a lemon cake for desert so I decided to branch out and bought a “box cake” I used a mix from Kroger. We are so lucky in Arizona we have lots of citrus trees and my lemon tree in the back yard had a bumper crop this year.

Here is how I modified the box cake to make a delicious lemon cake.

The Mix which contains, a lot of things I cannot pronounce contains flour and baking soda which is all I needed to know. The mix requires the following ingredients and this is how I modified them.

  • 3 egggs – added a large tablespoon of lemon curd.  I beat the eggs and lemon curd until the lemon curd was blended with the eggs before adding to the mix.  
  • 1/2 cup of water – I made it half water half lemon juice.
  • I also added a large teaspoon of lemon zest to the flour mixture . If you are using store bought lemons ensure you take the wax off with boiling water or the zest will not be as rich and flavorful.
  • I then put all the ingredient together and mixed into a smooth cake mix. I baked for 55 mins. It took longer to bake than the box said probably due to extra ingredients. Test with a skewer and once the skewer is clear its cooked.

To make the frosting add a dash of  lemon juice to 2 tablespoons of icing sugar and a heaped teaspoon of lemon zest.  Do not add too much lemon juice at first it gets wet quite quickly. (you can always add more if you need) Mix to a smooth runny but not liquid paste.  You could also get  Power Whip cream chargers online store and make some whipped cream at home.

Drizzle over the cake and place in refrigerator to set. I take it out of the refrigerator at least an hour before I serve as I want the cake to be moist and fluffy not cold. I also served with raspberries and blueberries for a delicious desert. You can also make a raspberry sauce and serve with it.

Extra tip you can do the exact same things with oranges instead of lemons to make a delicious orange cake throw in some cranberries to make it even more delicious.
